Hanoi University of Science and Technology (HUST), formerly known as Hanoi University of Technology (HUT) established in 1956, is a governmental education institution at undergraduate and graduate levels. HUST has more than 1,500 academic staff members, 52 of which are working in the field of biotechnology and food technology at the School of Biotechnology and Food Technology (SBFT). The annual number of freshmen enrolled at HUST is 3,500 of which 200 in Biotechnology and Food Technology. Among training and research activities at HUST (and in Vietnam), Food safety is one of the most interested fields with focused research funding from government and provinces.

SBFT-HUST develops research programs targeting the food biopreservation and the valorisation of the bio resources of Vietnam. It has been working on bioactive compounds derived from plants and microorganisms. SBFT-HUST has carried out the research on extracting bioactive compound from plants and microorganisms and exploring their antimicrobial and antioxidant activities. SBFT-HUST has been focusing on the investigation of antimicrobial and antioxidant properties of essential oils and bioactive extracts isolated from some Vietnamese herbs and spices in order to enhance food quality and safety. They are expected to serve as a natural food preservative and a prospective alternative to the currently used chemical-based preservatives. 

Besides, SBFT-HUST has been conducting research projects on exploring the microbiota (such as Lactic Acid Bacteria) of traditional Vietnamese fermented vegetable- and meat-based foods and their metabolic impact on food quality and safety, improving post-harvest and food processing and developing new products and improving added value of by-products from food industry.

SBFT-HUST has been served as national expert to the government in food technology, quality and food safety, and commission members for standards building up and issuing. It has also been involved in Framework Program funded projects (FP6 and FP7) related to food as well as feed safety and quality, including feed safety and quality such as FOODSEG (www.foodseg.net) and GRATITUDE (www.fp7-gratitude.eu):
