The Food Industry of Research Institute (FIRI) of the Ministry of Industry and Trade, Hanoi, Vietnam established in 1967, works primarily on research and technology transfer of food processing and production. FIRI has also other activities of consultation of food technology and equipment processes and training of Master of Research and Doctors in specialty of Food Industry. FIRI has more than 100 staff members, including 40 masters, including 12 doctors and 4 Assistant Professors.

The Department of Food Technology and Nutrition belongs to FIRI, with 8 staff members, including two doctors and two masters. This Department is specialized in research and production of traditional fermented foods and beverages such as beer, wine, rice alcohol, vinegar, fermented milk and fermented sauces from shrimp and fish or any of soy.

Recently, the Department of Food Technology is supported the research and pilot production of extracts of natural substances with activated biological properties such as: beta-glucosides from bitter melon, isoflavones from soybeans germinated and anthocyanins from Habiccus, GABA brown rice and non-energy sugars such as fructo-oligosaccharides from sugar cane and steviol glycosides from the herb Stevia rebaudiana Bertoni ... for the production of functional foods for old diseases of diabetes, cancer, and trouble sleeping…
